Did you know??? – It is estimated that one American farmer feeds roughly 155 people. They rise in the early hours of the morning to grow, raise, and harvest animals and crops that feed our society. Their blood, sweat, and unbelievable work ethic sets the foundation to create vital agricultural resources to fuel and keep our great nation running.

The vision – Owners Josh and April Egal have taken the farm to table concept and teamed up with Kevin Romasco and wife Josie Romasco of Four Twelve Winery to create Four Twelve Project.  The combination has become a juggernaut of farm to table cuisine with the local Moon Township winery who takes their wine making philosophy to another level. Let us explore why this Wine and Dinery located in Moon Township has Western Pennsylvanian’s buzzing!

Farm to table – At its core, farm-to-table refers to food on the table that came directly from a specific farm, without going through a store, market, middle-man, or distributor along the way. It underlines a direct relationship between a farm or local supplier and a restaurant. The benefits of this are restaurants and customers knowing how their food will be treated and prepared. Items are often delivered directly to the restaurant within hours of being harvested. This can also give restaurants the capability to get specialty items that they may not be able to get anywhere else.

The Wine – Wine is extremely popular because it is considered a cultured beverage. It is also healthy for the body in moderation. It was the mastermind of Kevin Romasco and wife Josie Romasco that understood the demand of Wine and the pivotal role it plays in our society. Their philosophy is that all wine is not created equal! They methodically sort and press the grapes, barrel age the wine, and take the American Dream to a new level by bottling it in their own home! Let us now dig deeper into the food, wine, and spirits!

Appetizers – Start out with an appetizer to share. The Candied Bacon (captioned) is 3 gargantuan ½ inch thick slices of bacon. As if to say bacon isn’t simply delicious by itself, finish it with paprika, brown sugar, and drizzle with a house made barbecue sauce and you are in for a real treat! Think of the Bacon Barbecue Smashed Fingerlings as a potato appetizer on steroids! It features fingerling potatoes cooked to a crispy perfection, a house made barbecue sauce, cheddar and jack cheese, and thick and crunchy bacon. The portion size is huge and plenty for sharing. The Fried Brussel Sprouts give you all the health benefits of being a cruciferous or detoxifying vegetable while still having loads of flavor due to being deep fried and finished with parmesan and balsamic.

Main dishes – Fan favorites are the seafood and mushroom risotto. Ask the top chefs in the nation, and the key to a solid risotto starts with perfectly cooked rice. It should be supple and smooth, creamy, have a delicate soupy consistency, but also have body. FTP nails all these elements to this amazing dish. FTP has a wide variety of bowls to choose from which gives you protein, carbohydrates, and vegetables. The base for these culinary treasures is Japanese egg noodles, zucchini, peppers, mushrooms, ginger, scallions, and sesame sweet soy glaze. They are available in steak, grilled chicken, shrimp, and pork meat options.

Other main dishes and featured menu items – One of the safest options to have on a menu is a burger. It gives the customer the comfort of knowing exactly what they are getting and the restaurant the leeway to get super creative. The FTP burger features bacon, steak sauce, bleu cheese, and pepper relish. The Rodayoh burger comes with crispy onions, jalapenos, cheddar cheese, and a house made barbecue sauce. There are a variety of skewers to choose from which include grilled sirloin steak, shrimp, pork, and barbecue chicken. They are served with grilled vegetables and your choice of a side. FTP also has a variety of salads to choose from which include the regional Pittsburgh steak, chicken, shrimp, or pork salad.

Wine selection – Four Twelve Winery is a small batch Winery where each barrel of wine has its own distinctive characteristics. They have your traditional selections of Pinot Grigio, Chardonnay, Riesling, Cabernet Sauvignon, Rose, and Zinfandel. A few staples include the Bourbon Zinfandel which features Lodi Zinfandel aged in a Wigle Bourbon Barrell for around 6 months. It starts out sweet and finishes with a smooth Kentucky bourbon finish. The Whiskey Cabernet takes the same approach this time by aging Cabernet Sauvignon in a Wigle Whiskey barrel for 3 months. Four Twelve Winery describes it as a “Samoa Cookie” on the nose with a caramel finish. The menu is updated frequently with new creations and wine selections.

Craft beers and spirits – FTP prides itself on providing 100% PA-crafted spirits and beers. If you are a craft beer lover this is the place for you as you do not even have the option to order a Miller, Bud, or Coors Lite.  With a plethora of breweries and distilleries statewide, FTP is on a mission to provide its customers all kinds of beer and spirit options for years to come. My final take

I have received numerous requests from people all over Western Pennsylvania that this place is a must try. From my initial research, I knew before arrival it would be good, but upon arrival, I was blown away. – Upon entry you immediately feel welcome by a comfortable and casual atmosphere. The setting for FTP was created and built by using re-purposed materials. Wood from old barns is incorporated into the design which gives it a rustic setting. The benches were made from old bunk beds, and a divider in the restaurant was taken right from the US Steel Building in downtown Pittsburgh. FTP also nails the lighting element by using ambient, Edison bulbs.

The owners bring a relentless level of enthusiasm and excitement to their mission of providing you a delicious farm to table meal and generous portions at an affordable price.  Their tremendous passion and drive filters throughout their staff, and they will give you excellent customer service. The chef takes great pride in preparing culinary masterpieces made with love and creativity. Take notice while dining here, the staff operates like a well-oiled machine, and everyone is happy. Those that are regulars know this place is a hidden gem, and if you have not tried it yet, make your way to Moon Township, you will be blown away!
